How I Got My Husband to Eat His Veggies!

Roasted Veggie and Quinoa Salad

My husband is the equivalent to a 5 year old when it comes to eating vegetables! Sure, he likes the easy ones like broccoli, carrots, green beans. But try to give him zucchini, or ANY squash, beets or Brussels Sprouts (GOD FORBID) and he wrinkles his nose and pushes his plate away in disgust!
Okay…so I might be exaggerating just a tad! But from the day we met over 30 years ago there are some vegetables he refuses to eat. I think this is based on aversions that stem from how certain vegetables were prepared when he was a child. So it’s been my quest over the course of our marriage to convince him that squash won’t kill him and Brussels are actually tasty!
One way of getting him to eat something is to convince him that it’s something different. For instance, he loves sweet potatoes so when I recently made this Roasted Vegetable and Quinoa Salad, I convinced him that the butternut squash was actually sweet potatoes! And I didn’t even bring up the roasted beets that he loved…that’ll just be our little secret!

In all seriousness, this salad is not only delicious and hearty enough to be an entree if you wanted to add a protein, but it’s also beautiful! Just look at those colors! And I could drink the dressing straight from the jar but…that’s a story for another day!

I roasted my own beets but you could always use canned beets in a pinch. And I roasted butternut squash but sweet potatoes would also be perfect for this salad…just don’t tell my husband!

I love to add quinoa to my salads to make them more substantial but you could leave it out, or add cous cous or orzo. Add some chicken, ground turkey or tofu and you’ve got a delicious entree!

My husband loved this salad and even had a second helping! Now if I could just convince him that Brussels are really tasty…!
Ingredients:
-roasted beets, cubed
-roasted butternut squash, cubed
-goat cheese crumbles
-pine nuts (or any nuts of your choosing)
-avocado, diced
-arugula
-1 C cooked quinoa
Dressing:
2 Tbs olive oil
2 Tsp Dijon mustard
2 cloves garlic, minced
2 Tbs lemon juice
2 Tbs honey
Fresh ground pepper
I measure with my heart and suggest you do the same..the heart knows!
